I honestly suck at making moodboards but I had a lot of fun with these! Some minor elaborations below, as usual, going from top to bottom, left to right!
Animal
There are lots of animals that suit Albert, but I think the ultimate choice is the snake. Reflective of knowledge, power and temptation, they're perfectly suited to represent him! The uroboros symbolism is just a bonus! Snakes represent a lot of thematic elements that dovetail excellently with Wesker's characterization; rebirth (self explanatory; he's "died" and was "reborn" quite a few times!), healing (reflective of Albert's relationship with life - the taking, giving and receiving of it - and medicine), the duality of good and evil (the roles he played as a spy and the ones he actively wills/participates in), and wisdom (obviously his medical/strategic knowledge but more importantly (imo) his knowledge of Umbrella, Spencer, the Ashfords, Marcus, etc... he's privy to a lot of things that even most of the main protagonists aren't)!
I also like to think that the wisdom (via intelligence, bioweapons, etc) he covets throughout the series is Wesker's ultimate undoing; his relentless pursuit of Spencer (I argue that any "obsession" he has is with Spencer moreso than anyone else), of the completion of his Uroboros Project, knowing he was always more than met the eye, was always "destined" for greater things... that all of his knowledge and power couldn't "save him" from his victimhood (being taken/groomed by Spencer in childhood) or from the cycle that he then continued to perpetuate (learning of this and proceeding with his villainy)... Shedding his previous lives and becoming something new with his grand death in RE1, and in each rebirth (Project W, Starter Virus, Uroboros)... it's very poetic to me!
Season
The virus(es) within him make his temperature run hot, so I think he'd enjoy colder climates. Even the heaviest snow would prove no problem for him for driving or traversing on foot! He likes going on walks and being out in nature (despite what his poshness might imply!), so even the cold weather won't stop his desire for a walk if it fancies him! Symbolically I also just think it suits him; winter sits at the crux of what ends and what begins in the cycle of nature, once again playing up the theme of death, rebirth and duality!
Food
Because the virus(es) inside of him have quickened his metabolism, he often finds himself... hungry. He's always got a little something on him, but he prefers things he can set out and pick at throughout the day if he's stuck in his control room or a lab! Cooking is an art to him as much as it is a science; he's very particular about the food he eats and is quite the critic! He's not much of a sweet tooth and prefers savory and spicy foods, his favorite meat being seafood of any kind. His guilty pleasure is greasy takeout!
Movie
I wanted to keep these mainstream, generally vague (no die-hard specific picks) and not include documentaries (which I believe would be his primary interest), but I know this might seem a bit of a silly choice for him; let me explain! A film like Casablanca is an enjoyable watch to the naked eye; a wartime love triangle romance that doesn't end happily. But it unsurprisingly has quite a bit of political commentary; Wesker enjoys analysis of anything, and movies are no exception! It would also thrill him to defy someone's expectations of him; perhaps he'd give a playful smirk when suggesting a movie like this... Oh, you expected something different? I don't think he'd be averse to any genre of film, but the films that would capture his interest would definitely have to be more than met the eye!
Plant
Again, I feel like lots of flora could suit him! But as a quick pick, I chose the Luna Red Ripple Peperomia! Representing vitality and passion (two things Albert has no shortage of!), they're hardy and can thrive in all kinds of circumstances. Dark and showy, resilient and tentacl-y, it's meant to be!
Color
Unsurprisingly, black and red are his colors of choice. Early in the franchise we see him in blue, which serves well as a symbolic device (telling the players/viewers that you are supposed to trust him or that he may be "good/noble") rather than being indicative of his preference. I believe he prefers black with dark, desaturated red to compliment it, veering more towards something warmer (equally as symbolic with red symbolizing power etc). If you asked his favorite color though, he might also say a dark forest green or something in an earth tone!
Career
This is of course only one of many; he's got quite the resumé! Researcher, scientist, engineering officer, captain, security officer... there's not much he can't do! Careers are just stepping stones along the path to getting what he wants. I do think he enjoys researching and looking beneath the surface; he's at his happiest working his analytical mind and would likely wrinkle his nose in distaste if you insisted something "wasn't that deep"!
Place
As someone always on the move, it's rare that he gets any time to relax! That said, I think any "home setting" (a series of safehouses he moves between) he would have would be dark, moody and mid-century in design! Lots of heavy fabrics, dark colors and sleek angles. Quite the interior design buff, he would enjoy having these places built out to his liking (not necessarily lavish)! Nothing obscenely out of the ordinary, of course. He also does a lot of his own housework, gardening, and so on; he likes working with his hands (and wouldn't trust many to be "loose" in his home anyway)! Predictably, Wesker values utility: everything has its place, nothing unnecessary. Because he moves around so much, he doesn't collect much, nor would there be any indication that it was he who was owning/occupying a property... but that doesn't mean he has to live in a hovel!
